LeaAnn is an emergency physician. She and her husband, Neal, are owners of Whitecap Kayak. She began her wilderness camping as a child in campgrounds all over the country and remembers eating SPAM coated with dried potatoes fried over a fire for breakfast. Once married to Neal, they backpacked, canoe-camped, and kayak-camped with their children mainly in the Upper Peninsula of Michigan where they lived. Now, she teaches kayak guides in the Apostle Islands how to plan and prepare for their own journeys, and, of course, she still gets to guide a bit herself.

It has been a challenge and a delight to make wilderness food safety a priority for our family, friends, and clients. Nothing ruins a beautiful vacation more than a terrible case of food poisoning. There are tricks to planning menus, purchasing food, packing, and preparing food that I have found to be helpful, and even compliant with food-handling codes. It has always been a goal of mine to make every outdoor trip memorable on so many levels. Great food at the end of a day of adventure is truly a highlight.
